Three-Ingredient French Toast

By now, you’ve probably realized that quick and easy recipes are kind of my thing. But if you have kids of your own – especially babies or toddlers – then you know that fancy, extravagant meals are typically more of a “once in a while” type of thing… So having said that, this French toast recipe is an absolute life-saver for us busy moms looking for something simple but delicious for those busy week nights! Plus, who doesn’t love having breakfast for dinner?

And there are your ingredients, folks! All you need is milk, eggs, and French toast bread (the Safeway kind is relatively inexpensive and is the best in my opinion!) The ratio is really easy to remember, too: 1/3 cup of milk and 1 egg per 3 three slices of bread. So what I like to do is do a full cup of milk with three eggs, which makes nine slices total; perfect for us!

Directions:

  1. Coat a non-stick pan or skillet with cooking spray and place over medium heat
  2. Whisk milk and eggs together until smooth and yolks are mixed in
  3. Saturate bread slices in mixture and allow excess to drip away
  4. Place slices on pan and cook, about one minute each side or until golden brown
  5. Serve immediately!

To be honest, Hadley has become quite the picky eater lately ( which came as a bit of a surprise to us because she used to eat everything in sight) so this is one of the few meals that we don’t have to pretty much force her to eat. She recently discovered the art of “dipping” and now insists on doing so with almost everything. Her newest fancy is French toast dipped in applesauce.
